Midnight Skål is our annual barrel-aged release: a Natural Process Ethiopian Guji aged in a freshly emptied straight rye barrel from Wild Hare Distillery in Tempe, AZ. The result? A bold, fruit-forward coffee layered with rye spice, toasted oak, and smooth intensity.
Rotated daily. Roasted in small batches.

Tasting Notes
Red Currant · Cocoa Nib · Rye Spice · Toasted Oak · Citrus Peel
Opens with an aromatic burst of red berry and spiced citrus.
The Guji’s natural sweetness brings a silky mouthfeel layered with cocoa nib and black tea.
The barrel contributes warmth and structure — rye spice, clove, cedar, and orange peel.
The finish is long, clean, and complex.
Barrel Aging Process
Once emptied, the Wild Hare barrel was sealed and transported fresh. We filled it with 100 lbs of unroasted Ethiopia Guji — a coffee known for its vibrant acidity and natural complexity. During the aging process, the porous green beans absorbed the whiskey’s essence: oak, vanilla, spice, smoke.
The barrel was rotated regularly for even aging. Afterward, the coffee was rested in breathable containers, then roasted to a balanced medium — preserving both the origin and the spirit influence.
This is not flavored coffee. This is a true barrel-aged experience — bold but clean, spirited but never artificial.

I like the surprising whiskey taste to this. I tasted it black at first to truly get a good taste profile. I enjoyed the flavor and will recommend it to anyone.
